Experience The Northern Hearth: Ancient Traditions & New Nordic Flavors

Join Chef Emily Taylor for a culinary journey through the rugged landscapes and refined flavors of the Nordic regions. Part-cooking class, part-history lesson, the class explores how a culture defined by survival and preservation evolved into one of the most influential gastronomic identities in the world. Emily will intertwine demonstrations of Nordic cooking with discussion around the traditional uses of particular dishes and techniques like lactofermentation and yogurt-making and how they laid the foundation for New Nordic Cuisine. Journey through Nordic history, starting with the Vikings and the influences their trade practices had on traditional cooking practices through to the food tradition of the local indigenous people of the north before ending with the modern culinary movement birthed in the early aughts. Class Menu:<ul><li>Simple porridge of savory oats with cheese, dried fruit, and meat</li><li>Dried salted cod</li><li>Blood In The Snow: skyr (yogurt) with fresh pressed ginger and beetroot juice</li><li>Selection of lactofermented pickled vegetables with butter and light caraway rye bread</li><li>Gravlax served on rye bread with mustard sauce, pickled onion, and dill</li><li>Finnbiff with potatoes (traditional Sami meat and mushroom dish)</li><li>Swedish cardamom buns</li></ul>About Chef Emily Taylor: Chef Emily has been dabbling in the food industry ever since a fateful dinner at Ten Tables back in 2007 where she was served a simple Spanish squash soup that was so inspiring she just had to figure out how to make it herself. Since then she has continued to explore cultures and regions through travel and food. After an extended journey through Scandinavia, the Nordics and northern Europe in 2018, she became enamored with the ability of Nordic cuisine to be traditional, cozy and yet at times deeply sophisticated. Determined to fill the Nordic food gap in the Boston area, she began holding annual Hyggefest suppers at home for lucky friends, and most recently held several popular Nordic Cafe popups at local farm-to-table restaurant, Urban Hearth. One of Emily's greatest joys is to share a table with mirthful guests enjoying accessible and nourishing food together learning about the places and peoples of the world through deliciousness. Vintage Romance: Valentine's Cake Decorating Class with Cake Niche

Learn how to decorate a cake in a vintage style in this workshop with Anna Abbanat from Cake Niche. Celebrate Valentine’s Day with buttercream, romance, and a whole lot of vintage flair! In this hands-on cake decorating class, you’ll learn how to create a Lambeth-style (also known as “vintage”) heart cake—think elegant piping, frills, swags, and classic over-the-top charm. Each participant will receive a prepared 5 inch two-layer heart-shaped cake, ready to decorate from start to finish. When you sign up, you’ll choose the flavor (chocolate or vanilla) and filling (chocolate mousse, whipped cream, or raspberry mousse). During class, you’ll get to choose your frosting colors and decoration style, making your cake totally unique—soft and romantic, bold and dramatic, or anything in between. We’ll cover piping techniques, design ideas, and tips for achieving that iconic vintage Lambeth look, whether you’re a beginner or just looking to refine your skills. You’ll leave with a beautifully decorated heart cake, new decorating techniques, and the perfect edible Valentine (for a loved one… or yourself). In this class, Kelcy will make a silky vegan Fall Squash Soup, a classic Potato Leek Soup, and a family favorite—Chicken and Dumpling Soup with homemade dumplings, great for using up leftover chicken. And, because no soup night is complete without something to dip, you’ll also learn how to whip up a quick Irish soda bread and homemade honey butter. Youth Filmmaking Summer Camp (August 18th to August 22nd)

LexMedia is hosting its popular kids filmmaking class again this August! Over the course of the class, students will showcase their imagination by adapting the well-known board game and stage production Clue into a short film. Under the guidance of our skilled staff, students will learn the basics of acting, improvisation, and camera skills in order to bring their visions to life both during the class and in future endeavors. The action-packed week cultivates the students creativity in a positive environment and allows them to explore their creative potential. The culmination of their effort premieres at a celebratory party with family, friends, and popcorn! As part of the class, every child will learn about a Sony PXW x70 camera, tripods, boom mics, lighting, the green screen, as well as Adobe Premiere or Final Cut Pro editing software. The class runs from&nbsp;Monday, August 18th to Friday, August 22nd&nbsp;from 10am to 3pm and the cost to attend is $400. Parents of kids between the ages of 9 and 14 should sign up now as space is limited. LexMedia's Annual Meeting featuring Boston 25's Brittany McCarthy

LexMedia will hold its Annual Meeting on May 20th at 6:30pm at Brookhaven in Lexington. The evening will feature special guest speaker&nbsp;Brittany McCarthy&nbsp;of Boston 25. The evening will also include the installation of new board members, a report from the co-chairs, and an annual treasurer’s report. Brittany will discuss the various components of producing local news programming and her role as business development manager at Boston 25. There will be a short period of questions and answers following her presentation. LexMedia members, friends, and the general public are invited to attend. LexMedia's Executive Director, Florence DelSanto, and the Board of Directors will review the past year, honor staff achievements, and look ahead with members, staff, and community members. There will also be an opportunity for LexMedia members and the public to give feedback and share ideas. Refreshments will be served.Hope to see you there! Primavera: Spring Produce Italian-Style with Chef Claudia Catalano

Join local chef and food writer Claudia Catalano for an Italian-inspired, springtime cooking demonstration. Participants will learn the techniques and recipes used to create simple dishes that combine seasonal produce with classic Italian flavors. Using the best of New England’s early spring harvest, Claudia will guide you through proper produce selection, efficient knife skills, and professional tips that will up your cooking game. You will nibble on Italian snacks while learning how to make asparagus and pecorino fritters, a savory appetizer that her Sicilian grandmother often made. Next, we’ll get busy with gnocchi, the beloved Italian potato dumplings. Fresh herbs—some of the first produce to emerge after New England’s long, cold winter—will be transformed into a bright green sauce for the dumplings. Lastly, you’ll learn a special technique for making flakey pie dough. The buttery pastry will form the base of a sweet ricotta and rhubarb crostata. Come hungry! Plenty of each dish will be prepared in advance so that everyone can enjoy a generous taste of Claudia’s cooking. You will leave with printed recipes, a ton of new kitchen knowledge, and hopefully some new friends! About Claudia: Claudia Catalano is a chef, writer, and food photographer who left a career in branding to earn a Master of Liberal Arts in Gastronomy from Boston University in 2016. She is a proud recipient of the Julia Child Teaching Assistant award in the Culinary Arts Program, where she worked with award-winning chefs, including the legendary Jacques Pepin. She continued her involvement with BU by becoming a part-time faculty member, while simultaneously operating her own personal chef business under the name Wild Carrot. She also teaches cooking classes at Cambridge School of Culinary Arts and various other community organizations. Her recipes, stories, and photographs have been featured regularly in The Boston Globe and Edible Boston. She now works as an editor and recipe developer at America’s Test Kitchen in Boston’s Seaport District. A descendant of Sicilian immigrants on both sides of her family, her food often evokes the memories of her mother and grandmother. Please note: this is a cooking demonstration class.
